Simple Paleo Nachos
This was actually requested by one of our followers: theshrinkingvioletblog, thanks for requesting such an easy and DELICIOUS recipe for us to look into and make for everyone else :)
This was such an easy and quick dinner, that my friends and I devoured the entire plate once we finished making it.
We basically combined 3 of our previously listed recipes below, so you can check out how we made it:
1. 5 Minute CRISPY Sweet Potato Chips (you said easy, right?)

Paleo gets easier. Craving carbs less and less and protein/veggies more and more.
The handmadehealth variation on sweet potato peanut butter balls - 3 small sw. potatoes, natural pb to taste (approx 2 tbsp), unsweetened coconut (~ 1/2 cup), coconut oil (~ 1tbsp), coconut flour (~ 1/2 cup), cinnamon to taste, 1 egg (though I’d probably do two next time) - baked at 350º for 30 mins or until less squishy. Use wet hands to form them. Sweet, easy, nutritious, caveman breakfast! The only problem was eating just one!
I made this this morning with strawberries instead of peaches. I’m on about 80% paleo and this fits perfectly. It was easy and fast to make too. I wonder how it would be with almond flour. I’m doing the Whole Life Challenge (www.wholelifechallenge.com) and the forum is very supportive. Coconut Flour Peaches n Cream Oatmeal
A grain, dairy, and sugar free comforting breakfast that reminds me of my oatmeal eating days.
1/4 cup coconut flour
1/2 cup coconut milk
1/2 cup water
1/2 ripe banana
1 Egg
Salt, Cinnamon, Vanilla
1 Peach for topping
In a pot over medium heat combine coconut flour, coconut milk, water and thinly sliced 1/2 of a ripe banana. Stir continusly until the banana has fully incorporated into a smooth texture. Crack the egg into the pot and continue to stir until fully combined.
Add a pinch of salt, cinnamon, and vanilla. Continue cooking until an oatmeal like texture has been reaches, about 3-4 minutes. Do not overcook or it will become dry.
Place in a bowl and chop up one peach for a topping. Finish it with a drizzle of coconut milk and optionally maple syrup or honey.
